Easy One-Pot Buffalo Chicken Chili
This you can do in a dutch oven/pot, or a Crock Pot, up to you!
Easy One-Pot Buffalo Chicken Chili
Equipment
- Dutch Oven, Stock pot, or Crock Pot
Ingredients
- 2 cups chicken broth
- .5 cups Frank's Red Hot
- 1 can diced tomatoes
- 1 can corn
- 1 can white beans
- 1 lb pre-cooked diced or shredded chicken
- 1 block cream cheese
- 1 packet ranch seasoning mix
- 1 dash onion powder
- 1 dash garlic powder
- 1 dash salt and pepper to taste
- optional: crumbled blue cheese
- optional: cilantro
Instructions
- Dump all ingredients except blue cheese and cilantro into the pot
- If using a dutch oven or stock pot: bring to a boil and then stir. Reduce temp and simmer for 30 minutes
- If using a Crock Pot: cook on high for 4 hours or low for 8 hours, stirring intermittently
- Top with crumbled blue cheese and cilantro, serve with French rolls or ciabatta bread!
