Crock Pot Beef Stew Recipe
There is nothing like kicking off the Fall season with some beef stew! I have to make it at least a few times every Fall/Winter.
It’s so inexpensive, easy, can feed a crowd, and makes for great leftovers!
I’ve been doing this recipe for about 6 years now, tweaking little by little. But this formula is tried-and-true.

Crock Pot Beef Stew
Equipment
- Crock Pot
Ingredients
- 1 large yellow onion large diced
- 2 large carrots large diced
- 2 stalks celery large diced
- 1 lb stew meat or chuck roast
- 2 tbsp (heaping) of Better than Bouillon. Can be veggie, chicken, or beef. Beef will be the richest
- 2 cups veggie, chicken or beef broth. Beef will be the richest
- 1 head garlic minced
- 3 sprigs thyme
- 8 medium Yukon Gold potatoes you can substitute with 6 russet
Instructions
- Add all ingredients together in the Crock Pot and stir
- Cook on high for 4 hours, or low for 7
- Serve with French bread and enjoy!
